TOASTED CHICKEN KALE SALAD WITH LEMON DIJON SALAD DRESSING

Do you need a chicken kale salad? If you follow me, well then you know I rant and rave over the Chick Fil A — Kale Salad! After tasting that I never thought I would find something even remotely close that I would love. This chicken kale salad was sent by the goods because not only is it yummy but it is so healthy.  I have made this for dinner and this is something that my husband has requested over and over. Tip: This is one of my go to meal prep meals and it last for a three days! It’s not expensive and really easy!

 

What you will need:

  • 1 slice of low sprouted whole grain bread, cut into 1 inch cubes
  • 1 tsp. olive oil
  • 1 pinch sea salt
  • 1 ground black pepper
  • 4 oz. raw chicken breast, boneless, skinless (cut into strips)
  • 1/4 tsp. ground chili powder
  • 1 bunch kale (torn into large pieces) (6 oz)
  • 2 tbsp Lemon Dijon Salad Dressing
  • 1 Tsp finely chopped lemon peel

 

Instructions:

  1. Preheat oven to 450*F
  2. Line a baking sheet with aluminum foil
  3. Combine bread, oil, salt and pepper in a medium bowl; toss until wet blended. Place on prepared

 

 

Lemon Dijon Salad Dressing

What you will need: 

  • 1 large egg yolk, pasteurized
  • 1 Tbsp Dijon Mustard
  • 1/4 tsp Sea salt
  • 1/2 tsp ground pepper
  • 4 Tbsp. Fresh Lemon Juice
  • 1 1/2 tsp Finely Chopped Lemon Peel
  • 1/4 cup Extra- Virgin Olive Oil

Instructions:

  1. Place egg yolk, mustard, salt, pepper, lemon juice, and lemon peel in a blender or (food processor); cover and blend until smooth.
  2. Slowly add oil, blending continuously until well blended.

STAYING ON TRACK DURING THE HOLIDAYS

Staying on track is extremely hard and it takes dedication to avoid those cookie, pies and holiday potlucks at your job. Is it possible? Yes! I did it last year! If you have a goal in sight there is no stopping you no matter what holiday it is. You can still lose that weight that you want. I missed out on my Starbucks holiday drinks, didn’t have pie and avoiding two potlucks at my job.

This year is a little different because I have exceeded my goal and I now have to tools to get me through the holidays without any guilt.

  1. EAT SWEET TREATS- In moderation, It’s all about moderation! It is ok to splurge and I like to splurge but I also make sure it is set in my mind that I can’t undo all of my work and progress because it is easy to get put in that mind frame.
  2. POSITIVE EFFORTS- Make an effort to have at least one consistent healthy meal. Every morning I have my Shakeology drink and I always make sure no matter what I plan on eating for that day or doing that day I know I am getting my Superfoods. Also load up on your veggies, if you have to have that bad food at least load up on your veggies and make your plate colorful!
  3. TAKE THAT WALK- Keep your work out routine. If you are visiting family and can’t keep up with going to a gym, go for a walk. I love evening walks right after dinner. So take that walk. Burn some calories and make it fun, have the kids or family join you!

Staying on track is hard but you can do it! Always stay focused on your goal that you have set for yourself. This holiday season I am committed to working out everyday with some rest days and continue to transform myself.

Tis the season to gain weight and be Merry! It’s that time of the year when you gain a bunch of weight because all of the goodies. I am in Marketing/ Sales for my day job which means my schedule will soon get filled with lots of Holiday parties. Reps from other companies will stop by with yummy treats and like always I will have to make a healthy conscious decision on what I want to do. I will prove that I can lose weight during the holidays.

I have recently taken my measurements and stepped on the scale and I gained 10lbs. I am definitely disappointed in myself, but I know what I will have to do to get back on track. I came this far and know I have the tools I need to lose those stupid 10lbs. I kind of knew I gained weight when those pants became a little tight LOL! I have picked up some not so healthy habits and I am proud to say I am at it again.

Today I started a new 30 day fitness program CORE DE FORCE and I am so excited to see the result. I am taking out my Holiday stress on a new workout. I wanted to start this program because this is not only a MMA inspired workout but I recently discover I still have no ab muscles from having my daughter. This plan comes with a meal plan, a 30 day calendar on which workouts to do and when. I hope to share my journey and experience here with you. I have always been a girl who loves to go to the gym so this will be a different experience doing the workouts from home.

My goal is 2 things——— 1. Inspire someone anyone to make the change to become healthier and 2. Push myself. 

I will share my meals, my struggles, my wins, and I will be completely honest here. I am even pushing myself to do a lot more Vlogs! I literally hate the way I sound so this will be interesting and the irony is I had my own radio station and I received my undergrad degree in Broadcasting!

Meet Meredith Breitenbach over at Mommy in Leggings. I had the pleasure of getting to know her and to be honest after interviewing her I teared up a little. Not because I’m hormonal but because her response about why she wanted to lose weight is similar to the reason I needed to get health. Learn how she took back control of her body and looks amazing! Meet Meredith! 

 

Tell me a little about yourself?

I’m a 29-year-old first time mommy to a beautiful baby girl, who is just about 5 months old. My husband, daughter and I live in Minnesota with a mini zoo of 4 dogs, 2 cats and 2 hedgehogs. We’re huge animal lovers, spend a lot of time outdoors hiking, camping and fishing, and love traveling and new adventures!

 

How many kids do you have and what are their ages?

1 child, a daughter who is 5 months. 

 

Were you active before you had kids? If so what activities did you do regularly? (Biking, Running, Etc.)

Semi active, but not intense. I totally let myself go during pregnancy and gained 46 pounds!!!!

Tell me about your weight struggle?

I’ve always struggled with my weight. I’m 5’9″, and have always thought of myself as bigger. I had always wanted to be some cute little petite blonde girl with perfect hair and makeup, graceful and delicate. And I’m NONE of those things. But I’m finally, now in my third decade of life, ok with this. I wish it hadn’t taken me so long to love who I was! I gained 46 pounds when I got pregnant, and it was all due to unhealthy eating. I didn’t necessarily crave foods, but I just wanted what was easy and delicious.

What was your biggest insecurity after having your kid(s) about your self image?

Probably my cellulite and stretch marks, but the weight loss has helped with cellulite, and I don’t care about my stretch marks as much anymore (hey, they’re proof my body changed in every way it could to carry my amazing daughter!).

 

What was your turning point when you knew you had to lose weight and get healthier?

When I had a daughter, and I knew I never wanted her to ever hear me say something negative about my body, and then feel the same about hers. I never want her to think she’s anything but absolutely perfect in every way, regardless of what shape she is. I don’t want to her see ads in a magazine and think “I want to be that thin” or “why am I not that pretty?” I want her to always love herself, and that begins with me loving my own body first.

Tell me about your work out routine?

After I had my daughter and was cleared for exercise, I started running a little bit here and there. When it got too hot for me in the summer months, I ran on the elliptical inside. Over the past month, my exercise routine has waned, and I need to get back into it…but I’ve stayed completely faithful to my new way of eating, and the pounds keep falling off.

Tell me about your eating routine?

I started eating foods I perceived to be “healthy” after my daughter was born: granola bars, oatmeal, etc. The weight came off, but slowly. Then, two of our friends introduced my husband and me to the Ketogenic Diet, which is a low carb, high fat, moderate protein diet. Yes–you read that right. HIGH FAT! The diet was developed in the 1920’s to help children with epilepsy. It has since been known to help people with diabetes, Alzheimer’s, and other diseases. This diet puts your body into a state of Ketosis–a process in which your body doesn’t have enough energy from carbohydrates to burn energy, so it turns to the high amount of fat to burn as fuel instead.

What exercises did you incorporate into your weight loss?

I’ve done very little exercise compared to the amount of weight I’ve lost (57lbs total so far). I do know I need to become more dedicated to exercise though!

 

 

The biggest obstacle you faced when losing weight? Did you ever gain the weight back?

The biggest obstacle was completely changing how I ate. If someone told me 6 months ago that I wouldn’t be eating bread or sugar (carbs!!) I would have laughed at them. It’s a hard diet to start, but the rewards are so amazing that it’s hard to stop! I haven’t gained any weight back, and the pounds are still coming off. I highly doubt I’ll ever go back to my previous way of eating. I feel SO great on this diet–always energetic (and that’s saying a lot with an infant and not getting much sleep!!), not hungry nearly as much as I used to be, and my mind feels sharper as well! It truly has become a way of life for me, and I could never say that about any other diet I’ve ever tried.

 

What is the best advice you can give to Mommies out there that are struggling to lose weight or even get motivated?

Really focus on your motivation–it doesn’t matter what that motivation is. Child? Family? High School reunion? Bikini? Whenever you’re feeling down, focus intently on the reason you started. Ultimately the reason you start, has to be strong enough for you to keep going. Every other time I’ve tried to maintain a diet, my motivation wasn’t strong enough. Now, if I ever feel like I’m struggling, I think of my daughter and tell myself that I’m doing this for her–so that if I can feel good in my own skin, I can help her to always feel good in her own. Confidence is such an enormous thing for little girls, and I want my daughter to always have confidence in herself, and never look in the mirror and think she’s flawed.

What helped you on your journey of weight loss?(friends, family, support groups)

My husband started eating Keto with me (he lost 20lbs!!!!), and also the support from my Instagram Keto Friends was amazing. I started an IG handle only for my Keto meals, and to follow Keto accounts, called @mamabear.eatsketo. It’s an outlet for me to see meals as inspiration, share my successes, and help and be helped by others. Taking before and after pics has also been super inspirational to me. I feel stupid taking them, but then I see the difference and can’t believe how far I’ve come. It makes me feel proud of myself that I’ve continued to make these healthy changes, and my body is responding well to it!

What is your motto?

If you never try, you’ll never know what could be.

Dear Mommies-

You are worth it! To feel your best, to look your best. You are the backbone behind that household. You deserve to feel like a supermodel, even though you were probably just up all night with one of your kids. If you aren’t happy, well then your household is not happy. If you are not healthy, well who is going to watch your kids grow up? Often times us moms tend to put ourselves all the way at the bottom of the list.

If you are like me– well then your probably thinking the time that you are working out could be the time that you could catch up on sleep, or even the season of Orange Is The New Black. You may not feel motivated to go to the gym after you worked all day, cooked dinner but going to the gym will make you feel so much better. I promise after you’re in the gym for an hour, you will walk to your car feeling like you can take on the world.

You will feel even better when your pants start getting big and you have to shop for a smaller size. Dear mommies you are so worth it. Yes, our job is to take care of our families, to make sure the kids are healthy and happy and to be the best role models.

Find something in the gym that makes you happy. Make a playlist, a playlist that is only to be played while in the gym. Get some cute workout clothes. Working out is suppose to make you feel good. Get a blinged out water bottle, get some cute ear buds and go for it. Take over your life and get healthy for you!

“Fall in love with taking care of yourself. Mind, Body and Spirit”

Listen to your mind, body and soul. These words are so important to me. I listen to my body and thoughts. Does that sound a little nutty?! Probably! I am very into listening to whatever my inner voice is telling me. Last week I decided I needed a week break. I finally found out why my body was not healing, it was because I was not getting any rest. Life is hectic, life is busy and self inflicted pain is something that could be avoided. I needed a break from social media and blogging. How could I need a break from something I truly love? I love my kids but this weekend I am dropping them off at my parents house and this mama will have a break.

I created this blog because I wanted to first blog my journey on losing the baby weight but then I really got into fitness and my life has truly changed.



 

Fitness Check 

This mama gained 5lbs and it wasn’t in muscle. With everyone being sick including myself I skipped the gym, the home work outs and ate like there was no tomorrow. TODAY, starts my jump rope challenge! I am so excited and its similar to my plank challenge which was a big hit! I have cut out carbs for lunch and dinner and increasing my veggies with every meal! I fell back on the bandwagon of drinking soda, so that is completely out! I am human, I cry and I crave carbs (in that order)! The great thing about being in my position is I know what my body needs and how I can take care of my body. Disappointment is the word that has taken over. Not because I gained the weight, but because I got in a place in my life where I didn’t realize I needed a break but put myself into a downward spiral.

I am human, I am a mom and a blogger and this is my life. I love to be transparent because that’s why I am here!

TODAY, starts back to taking care of me and eating right again (since I just downed a bag of chips yesterday)! The positive is dinner is still really healthy, and I am so excited that my kids love to eat healthy at least I am doing that right! I am a mom of two, a wife, I struggle everyday like you with good decisions and bad decision but everyday is a learning lesson and thats what make life beautiful.

What Is Your Excuse To Not Becoming A Healthier You?

EXCUSE-GYM-NOT WOKRING OUT

What is your excuse? Why don’t you take time out of your schedule to work on a healthier you? Why are you second? Why are you last?

We can come up with every excuse in the book, on reasons why we can’t work out. I remember my excuse use to be time. I didn’t have time to work out, because I was a mom who worked a full time job. I remember I use to spend time at the nail shop getting pampered or I had time to fit Starbucks in my schedule while taking the kids to school. In my eyes I really didn’t have time and knew there would be no way I could take the time to work out.  I didn’t see the point of paying for a gym membership because I didn’t know when I would ever use, and it just would be a waste of money.

I realized after I made working out a part of my life that it had nothing to do with not having time but it had to do with changing my mindset. I had to ask myself is working out important to me? I then realized that I never made it important and something pressing and so then I realized I could make a way to make my gym schedule work with my work and home life.





Here are 3 tips that helped me beat the gym excuses and put more time into getting healthy.

  1. Time. Make time like you would for anything else. 30 minutes at the gym or doing at home workout is better than not doing anything at all. I like to put it in my planner with cute little stickers because stickers make everything so much more cute and fun! I am a planner mom and I literally have to write everything down the night before or nothing the next day will get accomplished!
  2. Money. If you don’t have the money to join or gym or even invest in home work out equipment visit your local library for work out DVDs. I love them and if I know that week I wont have time for the gym I always visit my library because the best part is it’s FREE.
  3. Morning or Night? You have to figure out if the morning or night is better for you to work out. I tried to do 5AM work outs and I learned quickly I am not that type of person. I have to pack my gym clothes the night before and go after work or I will not be motivated to go. I could easily change at home because I live so close to the gym but I have tried that, and if I sit down I will not go!

Just like everything else in life you have to figure out what works and doesn’t work in your life and the schedule you are on.

A Mothers Guilt: When You Put Yourself First

Here is to the lady in the mirror that doesn’t feel good enough. Who is tired from sleepless nights from a 10 month old baby. Who has worked all day and still manages to get home to the kids and husband, make dinner and rushes to get to the gym. Here is to the mom that is looking in the mirror feeling some type of guilt because the time she is spending at the gym could be spent with her kids. Here is to the mom that lifts that bar and feels weak not only physically but mentally. Who can’t do another push up, plank or even jumping jack.



 

I am here to tell you that you’re not alone. I am that mom. This week has been rougher then most weeks. We all have our days where we feel guilty because we are choosing to put ourselves first by going to the gym for an hour. For taking some “mommy time” and putting her needs before her families. YOU ARE NOT ALONE! We all have those days, but make sure you take out all of your anger and aggression in the gym.

It is difficult to put ourselves before our family and I am learning that, this is a normal feeling. Is it right?! I am not sure and still looking for the answer. One thing I do know is, sometimes I need to get my thoughts together or sort things out and the best place for that is the gym. This week has been especially hard because I have been to the gym everyday so far and have not really spent tons of time with my kids. Yes, I feel guilty but no matter how perfect my schedule is planned out I think I will always feel guilty. When you have bad days know your not alone, that it is ok if you skip the gym to spend time with your family. When you have those days stay home and wait for the kids to go to bed. Pop in the workout DVD and get your sweat on. There is so much pressure on us as moms, women, and wives that you don’t need to be even harder on yourself. This is why home workouts are so important and why I have to keep reminding myself why I created OH CHIC MOM. I created this brand because I know the struggles of working out, eating right and by nature putting yourself last. Don’t get me wrong, I have an awesome husband that helps out but he can’t fill my shoes, just like I can fill his shoes. So if you are having those days, know your not alone and you can do anything!



Lemon Shrimp & Asparagus

Lemon Shrimp

Cooking has been very therapeutic all the days that I am not busy, probably because of the co-op I have joined. I am satisfied knowing that everything I am cooking for my family is fresh and healthy for them. Along with my lifestyle change my cooking has changed drastically. Fresh veggies like Asparagus and any kind of seafood like shrimp (families favorite) has been very important for dinner.



Stir-Fry in my house is a big hit. Not only for mommy because its always a less than 30 minutes meal but so does my kids and the husband. My 3 year old loves how there is always sauce on it because it probably reminds him chicken nuggets and BBQ sauce.

 

Ingredients
  • 5 tablespoons olive oil, divided
  • 1 pound asparagus, ends trimmed and each stalk cut into 3″ pieces
  • ½ teaspoon salt, divided
  • 2 teaspoon ginger paste
  • 1 teaspoon minced garlic
  • 1 pound large raw shrimp (peeled)
  • ⅔ cup chicken stock
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • ¼ cup lemon juice
  1. In a small bowl mix together chicken stock, soy sauce, sugar, lemon juice and 1 teaspoon of ginger. After it is put together set it aside.
  2. In a large pan heat tablespoons of olive oil over medium-high. Add shrimp to pan and cook until its slightly pink. Season with whatever salt product you want. Also add 1 tablespoon of ginger. I like to use seasoning salt or sea salt both are great. Shrimp needs to be a little undercooked.IMG_4070
  3. In the same frying pan add 3 tablespoons of olive oil. Add asparagus to pan and cook for 2 minutes and turn over. The asparagus should turn bright green. Once it turns bright green add the shrimp you put aside and also add the lemon sauce you set aside. IMG_4058
  4. Cover with lid and cook for an additional 10 minutes.

 

I made this meal all the time for my family when I started my lifestyle change. I would serve them rice or noodles with it and I would have an extra serving of veggies. Now that my goal is to maintain it all, I still will rarely have carbs at dinner. Carbs just sit there and will turn into sugar and that sugar will make you gain weight. I am hoping that now that I only cook good food for my family that my kids will grow up to make healthy choices.
